Chasseur Sauce

Chasseur sauce, sometimes called "hunter's sauce", is a simple or compound brown sauce used in french cuisine. It is typically made using demi-glace or and espagnole sauce as a base, and often includes mushrooms and shallots. It may also include and a finishing of fine herbs. (Source - Wikipedia)

I think my recipe is the easiest way how to make chasseur sauce.


Try this recipe and taste home-made chasseur.



INGREDIENTS:


  • 1 cup white wine
  • 6 oz. mushrooms, sliced
  • 2 oz. shallot, minced
  • 2 oz. butter
  • 1 quart demi-glace
  • 8 oz. tomatoes, diced
  • 2 tsp parsley, chopped



METHOD:


  1. All except parsley and tomatoes: First Place white wine in a saucepan over medium-low heat and reduce by 3/4. Then Add mushrooms, shallots, butter and demi-glace.
  2. Add tomatoes: After that add tomatoes and simmer for 5 minutes.
  3. Serve: Apply parsley and serve over your choice of meat.
